Quick and Easy Phở

WHAT YOU WILL NEED:
1 medium onion, peeled and charred
1 small onion, peeled and sliced
2 inch piece fresh ginger, charred
4 quarts beef, chicken or vegetable broth
1 quart water
1 Jovian Pantry® Phở Spice Sachet
2 lbs flank steak or chicken breast
Salt or fish sauce to taste
1 package Phở rice noodles
1 bunch cilantro
1 bunch Thai basil
1 package bean sprouts
Scallions, chopped
1 lime, quartered

DIRECTIONS:
1. Char the medium onion and ginger on the stove top. Add them to a large pot along with the broth, water, and the Jovian Pantry® Phở Spice Sachet. Bring to a boil.

2. Add your choice of protein to the pot and simmer on medium heat until cooked through. Unflavored seitan is a great vegetarian alternative.

3. In a separate pot boil the rice noodles. Drain and rinse with cold water.

4. Once the protein is cooked through, remove from the pot, thinly slice, and set aside. Skim the broth and add salt or fish sauce to taste. Simmer on low until ready to serve.

5. To assemble, place a serving of noodles in a large soup bowl and top with sliced protein, sliced onions, cilantro, Thai basil, bean sprouts, and chopped scallions. Slowly add the hot Phở broth to cover. Finish with a squeeze of lime for brightness. Add sliced chilis for some extra heat! Unused broth can be frozen for later.
